After working together under French chef Daniel Boulud for two decades, industry veterans Dominique Paulin and Olivier Muller decided to join forces for this exciting new venture.  As senior executives (Operations Director & Corporate Chef, respectively) within Boulud’s organization, Paulin and Muller have opened and managed the operation of high-profile, successful restaurants in NYC, key dining markets throughout the US, and internationally.

Dominique Paulin, a resident of the Montclair area, discovered 544 Bloomfield Avenue - a 1950’s original bank space, and  later a theater - and called upon his longtime friend, Olivier Muller.  They both fell for building’s architecture, dramatic high-ceilings, impressive windows and garden area. Their journey as partners to transform the space into a restaurant had begun.  

"Our vision is to create a culinary experience with serious intent in a thoughtfully-designed, inviting setting.  A commitment to friendly service and hospitality are of the utmost importance, along with providing quality, refined & approachable seasonal french fare,” state the partners.  Faubourg will be a neighborhood restaurant which embodies the convivial, lively and welcoming atmosphere of original Parisian faubourgs. 

Olivier Muller will operate as Executive Chef, while Dominique Paulin will manage the Front Of House.
